Papri chat / Papdi chaat

Papri chat / Papdi chaat is one of most popular street food in India. It has a unique sweet sour churchy flavour. I try to make it easier for. Hope you will like. If you like, you can use coriander chatney. But personally I like fresh coriander in it.

Ingredients:

For Papri:

• 1 cup flour

• 1/2 cup semolina

• 2 tablespoon oil

• 1 and 1/2 teaspoon salt

• Oil for deep fry

For Chaat:

• 2 cups chick peas(can)

• 1 medium boiled potato diced

• ½ cup gram flour noodles

• ¼ cup cucumber chopped

• 1/6 cup tomato chopped

• 1/6 cup onion chopped

• 1 tablespoon chat masala

• 3-4 green chillies

• ½ cup tamarind puree

• ½ teaspoon roasted cumin powder

• ½ teaspoon black salt

• 2 teaspoon sugar

• Salt to taste

For Yogurt:

• 1 and ½ cup Greek yogurt

• 2 tablespoon sugar

How to make:

1. Whisk yogurt and sugar. Mix well and put into freeze it.

2. Mix flour, semolina, salt, oil and water together and make soft dough. Let it sit for at least 15 minutes.

3. Divide into 5 and roll each ball. Make you desire shape (cut with cookie cutter or small or big square shape).

4. Heat the pan with and fry them on slow heat till those become light golden brown.

5. Make tamarind puree, black salt, cumin powder and sugar and keep aside.

6. Mix chick peas, potato, half of chillies chaat masala and salt.

7. Arrange papri in a plate and add spiced chick peas, cucumber, tomato, onion, chillies and coriander on each papri.

8. Top up with cold yogurt, tamarind sauce, papri and gram flour noodles.

9. Enjoy the flavour of Papri chaat/ Papdi chaat.

Luchi

Luchi is deep fried flat bread which is made by flour, purified butter/ oil, ajwan (optional) and salt.

Ingredients:

• 1 cup plain flour

• 2 tablespoon ghee/ oil

• Ajwain (optional)

• Salt

• Oil for deep fry

How to make:

1. Dissolve the salt in water and mix flour, ajwain and purified butter. Then add salt water.

2. Knead it and make smooth dough and keep aside 10 minutes.

3. Heat the pan with oil and divide dough into 7-8 balls.

4. Roll each ball, don’t make thin.

5. When oil is ready, place flat bread in oil and when it puffed up, turn it over.

6. After 30-45 second remove it from oil and repeat the process with rest of balls.

7. Serve hot luchi with meat curry/ lentil / mixed vegetables.

Chicken tikka sandwich with mint raita is very easy and simple recipe. Your kids will just love it. I use mint raita here. Instead of you can use cheese or mayonnaise.

• 200 grams chicken tikka

• 6 sliced bread

• Butter

• Cucumber sliced

• 90 grams mint raita

How to make:

1. Spread butter over bread and place cucumber slice, chicken tikka and mint raita top of each other.

2. Place anther bread top of this and cut it diagonally.

3. Enjoy your chicken tikka sandwich with mint raita.

Mango Lassi/Mango smoothie

Sometimes I get shocked to see similarity in food items between different countries. Can anybody tell me what the difference between Mango Lassi and Mango Smoothie is? I can’t find any. Only basic difference is mango lassi is from India and mango smoothie is kinda western. It is mango season in Australia so enjoy the flavour of mango.

Ingredients:

 

• 1 cup diced ripe mango or mango pulp

• 1 cup milk

• ½ cup Greek yogurt

• 1 tablespoon sugar

• 2 drops of rose water(optional)

How to make:

Blend all things together and make it smooth. Serve mango lassi/mango smothie chilled.

Gulab Jamun – Quick and Easy

Gulab jamun is a popular dessert in India, Pakistan and Bangladesh. It is traditionally made of dough consisting mainly of milk solids (khoya) which is an Indian milk product is rolled into a ball together with some flour and then deep fried. It is then put into in sugar syrup flavoured with cardamom seeds and rosewater. Here I make easy version of Gulab jamun for you. Hope you will like my easy Gulab jamun recipe.

Ingredients:

• 2 cups full cream milk powder

• ½ self raising flour

• Pinch of saffron imitation

• 200ml thicken cream

• 3 cups sugar

• 2 cardamom pods

• Ghee or Oil to deep fry(you can use half oil and half ghee)

How to make:

1. First put a sauce pan on heat with 3 cups water, cardamom and sugar. When sugar is melt and syrup comes into boiling point boiling point, turn off the heat. Keep aside. We need lukewarm syrup to soak the sweet.

2. Mix milk powder, self raising flour, saffron and cream. Need to be careful about adding cream because we want soft dough which we can work with (don’t make too soft which hard to shape). But on the other hand hard dough will make crack on sweet.

3. Divide the dough into 20 balls.

4. Heat the pan on low medium high with oil for deep fry. When I say that it means enough oil to deep the sweet while frying. Check the oil to put a little piece of dough in the oil if it sizzles and comes up slowly .It means the oil is ready.

5. When oil is ready (don’t make oil too hot, we will slow fry them), put the sweet in the oil with care and fry it all side till it becomes golden brown.

6. Take out the sweet from oil and straight put into lukewarm syrup. Repeat the same step for rest of sweet.

7. Soak sweet at least ½ hr and take out the sweets from syrup.

8. Serve Gulab jamun cold.

Vegetables Samosa

When you are looking for samosa in abroad, you will get this kind specially. This is actually vegetables samosa. In near future I will give you potato stuffed samosa recipe.

Ingredients For Vegetables Samosa:

For Stuffing:

• 200 grams finly slice cabbage

• 80 gram grated carrot

• 1/6 teaspoon turmeric

• ¼ teaspoon cumin

• ½ sliced medium onion

• 2 chopped green chillies(optional)

• 1 tablespoon coriander leaves

• 1 tablespoon oil

• Salt to taste

For Dough:

• 1 cup plain flour

• ½ teaspoon salt

• Oil for deep fry

Also need 1/4 cup dry flour for rolling and to make glue.

How to make:

1. Heat the pan on medium high with oil and add the cumin.

2. When cumin is crackle and add sliced onion.

3. Fry the onion till it becomes soft and add tumaric. Cook about 1 minute and add cabbage.

4. Stir it and cook it about 2 minutes. Add carrot.

5. Cook it till it becomes tender and cooperate nicely.

6. Add the chillies and coriander and stir it.

7. Remove from heat and keep aside.

8. First dissolve the salt in 1 tablespoon water and mix flour in that. Add about ½ cup and 1 tablespoon water. Knead it and make it smooth soft dough. Let it sets at least 15 minutes.

9. Make 5 balls in that dough and roll each ball in dry flour. Try to make 8” long and 6” wide oval shape bread and use a knife to make rectangle.

10. Heat the pan on low heat and fry the bread about 30 second in both sides and cut length wise.

11. Take2 teaspoon flour and add 3 teaspoon water to make glue.

12. Take bread and glue it in one side of length wise.

13. Make a cone and stuff the cone with vegetables stuffing and glue the top part and close it like envelop.

14. Repeat the process with rest of breads and deep fry them in low heat till Samosa becomes golden brown.

15. Serve vegetables samosa hot.

Tips: some people like double fry Samosa. In that case fry them till somasa becomes light golden and take off from oil. After 5 minutes fry them again and make then golden brown.

Achari Chicken Easy and Simple but Delicious Dish

Achari chicken is made with all the spices of pickle or achar. Achari chicken is a delicious dish which goes very well with roti, parathas or naan. Some of us like achari chicken with lots of spice and stuffed chilli. But personally I like this way. If you want more spice, use these spices (mustard, fennel, nigella, and fenugreek) 1 and half times more. If you want little bit tangy, use lemon juice.

Ingredients:

• 1 curry cut chicken(10 size)

• 1 medium sliced onion

• ½ teaspoon chilli powder

• ½ turmeric powder

• 1 tablespoon chopped garlic

• 1 teaspoon ginger paste

• 2 teaspoon mustard paste

• ½ teaspoon fennel seeds

• ½ teaspoon nigella seeds

• ½ teaspoon fenugreek seeds

• ½ teaspoon cumin seeds

• ½ cup Greek yogurt

• 4 green chillies

• 4 tablespoons oil

• Salt to taste

How to make:

1. First roast all seeds (cumin, fennel, nigella and fenugreek) about 30-45 seconds and grind it coarsely.

2. Heat pan with oil and add onion. When onion becomes soft, add chicken.

3. Seal chicken and add garlic, ginger, onion paste, turmeric, chilli powder, mustard paste, mixes spices and salt one by one. Cook it till oil comes out.

4. When oil comes out, add yogurt.

5. Cook it about 15 minutes in closed lid. Stir it occasionally and if it gets dry and add 1-2 tablespoons water. Add green chillies.

6. Check the salt and 1 more minute. Achari chicken is ready to serve.

7. Serve hot achari chicken with roti or parathas.
